Cowpea Meal

- 250 gr. Damla Cowpea
- 1/2 Bunch of Parsley
- 4 Spring Onions
- 1/4 Bunch of Dill
- 1 Red Bell Pepper
- Four Gherkins
- 1/2 Tea Glass of Olive Oil
- Juice of 2 Lemons
- Sumac
- Salt
We boil the black-eyed peas, which we soaked overnight, in a pot with enough water to cover them and drain them. We boil it again for 20 minutes in water to which we add lemon juice and drain the water. We dice the peppers and pickles. We finely chop the dill, parsley and onion. We mix all the ingredients with the black-eyed peas. We add olive oil, lemon juice, salt and sumac, which we mixed separately, to the mixture…
